Baked Apple Stuffed with Mincemeat


 

 

This is a comfort food pudding, easy to make, hot, sweet and satisfying. Serve with custard, cream, ice cream or all three.

 

Ingredients:

·         An apple per person, cooking or desert variety

·         Mincemeat

·         Optional: Sugar

 

Method:

·         Core the apple – the bigger the hole, the more mincemeat you can get in

·         Place the apple(s) onto a baking tray/tin/dish

·         Stuff the hole with mincemeat, pressing down to get as much in as possible

·         Score the apple skin all the way around the middle. This stops the apple from exploding

·         Optional: Sprinkle with sugar if you prefer it sweeter

·         Bake in a fairly hot oven for about half an hour, until the apple is soft
